Banana Bread

Description

This recipe was one of the first I was excited to make after my celiac diagnosis. I did try many recipes until this one had the best taste. it is soft and delicious. It is made with good healthy ingredients, you can add any topping like walnuts, cashews, pecans, or chocolate chips, but I choose to eat just like this to have with my chamomile tea.

Ingredients

  • 2 cups almond flour

  • 1/2 cup Arrowroot flour

  • 1/8 teaspoon salt

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 cup coconut oil

  • 2 large eggs

  • 1 teaspoon vanilla

  • 3 ripe bananas

Preparation

  1. Preheat the oven to 375F.


  2. Spray a 9x5 loaf pan with coconut oil and set aside.


  3. In a bowl, mash the bananas, add the remaining ingredients, and mix with a mixer until all the ingredients are combined.


  4. Pour the batter into the loaf pan.


  5. Place the banana bread in the oven and cook for 40-50 minutes until golden or until a toothpick inserted in the center comes out clean.


  6. Remove banana bread from the oven and let it cool down for a few minutes.


  7. Slice and enjoy with your favorite drink.
