Oatmeal Pancakes

Description

Easy and delicious pancakes that are gluten-free and healthy.

Ingredients

  • 3/4 Cup unsweetened coconut milk or Almond milk.

  • 2 Eggs.

  • 1 large banana.

  • 1 Tablespoon baking powder.

  • 1/4 teaspoon of salt.

  • 1 cup of oats.

  • spray or butter for skillet.


Preparation

  1. Place the milk, eggs, banana, oats, baking powder, and salt in a blender. Blend until smooth batter.

  2. Spray a skillet or griddle and heat over medium.

  3. Pour 1/4 cup of batter into the pan and cook. When golden brown, turn your pancake. Cook for another 2 minutes.

  4. Repeat the process with the rest of the batter. Top with your favorite toppings.


Tips:

When choosing the oats at the grocery store, always ensure they are certified gluten-free. Oats are naturally gluten-free but could get cross-contaminated in the process.
