Sauteed zucchini

Description

I love how easy is to get this recipe together very quickly when I am in a rush to get dinner at the table, but at the same time, it is nutritious and can be paired with any protein.

Ingredients

  • 4 tablespoons Avocado oil

  • 3 Zucchini, sliced into coin shapes

  • 3 cloves of garlic chopped

  • 6 basil leaves, chopped

  • 1/2 cup of cilantro chopped

  • 1/4 teaspoon of powder turmeric

  • 1/4 teaspoon of ground black pepper

  • 1/2 teaspoon of salt

  • 1 squeeze lemon without the seeds

Preparation

  1. Heat 4 tablespoons of avocado oil in a large pan over high heat until bubbly. Add the Zucchini and cook for 5 minutes.

  2. Add the garlic, salt, turmeric, and pepper and keep stirring for another 5 minutes.

  3. Continue stirring and add the cilantro and basil.

  4. Cook for another 5 minutes, stirring until zucchini is golden brown and tender.

  5. Enjoy warm with your favorite protein.
